The ingredients needed to cook Chilli Oil:

  1. Provide 600 ml of Oil.
  2. Get 4 cloves of garlic with skin.
  3. You need 2 tbsp of coriander seeds.
  4. Prepare 3 tbsp of whole black pepper.
  5. Take 4 of black cardamom.
  6. Use 1 1/2 tsp of salt.
  7. Prepare 2 tbsp of white vinegar.
  8. Provide 1 cup of chilli flakes.

Instructions to make Chilli Oil:

  1. Take a heat proof bowl, add in chilli flakes, salt & vinegar. Mix well and set aside..
  2. In a pot, add rest of the ingredients along with oil and cook on the lowest flame for an hour while continuously stirring it and making sure nothing burns. When the garlic changes colour to brown, then turn off the flame and let it rest for 5 minutes or so until the flaming hot temperature drops a little..
  3. Strain the oil in a separate bowl, be careful as it will be very hot. Do not burn yourself..
  4. Now slowly gradually add in the oil to the chilli flakes mix. Combine well an let it infuse and cool down before storing in an air tight container..
  5. Devour with any Chinese food you like or however you prefer..
