  1. Provide 1 of large courgette.
  2. Prepare 1 of carrot.

  4. Provide 1 tsp of fish sauce.
  5. You need 100 g of prawns.

  7. Prepare Handful of fresh herbs (I used coriander and mint).

  1. Use a veg peeler or a mandolin to make ribbons with about half the courgette.
  2. With the other half slice into matchsticks and add the whole lot to a bowl.
  3. Cut the carrots and peppers into similar matchsticks.
  4. Toss all the veg together in the bowl.
  5. Add the fish sauce, prawns and half the herbs and nuts, season to taste. Feel free to add more fish sauce..
  6. Serve in a bowl and sprinkle the remaining nuts and herbs.
