- Get 500 gms of Bhindi.
- Take 1 of Onion.
- You need 2 of Tomatoes.
- Provide 2 of Green Chillies.
- Provide 1 tablespoon of Ginger Garlic Paste.
- You need 4 tablespoons of Dahi.
- You need 1-1.5 tablespoons of Mustard Oil.
- Prepare 1 Pinch of Hing.
- Provide 1/2 Teaspoon of Ajwain.
- Use 1 Teaspoon of Jeera.

- Prepare 1 teaspoon of Amchoor Powder.
- You need 1/2 teaspoon of Anardana Powder.
- Prepare 3 teaspoons of Dhaniya Powder.
- You need 1 teaspoon of Laal Mirch Powder.
- Prepare 1/2 teaspoon of Haldi Powder.
- You need 2 teaspoons of Salt.

Steps to make Bhindi Sabzi Masala:
- Wash Bhindi properly, dry it with a cloth & cut into medium-small size pieces..
- Chop onion very finely, grind tomatoes, green chillies & ginger garlic paste into fine purée in a mixer grinder..
- Stir Dahi properly so that it doesn’t get burned while cooking..
- Now take a Iron Kadhai, add 1/2 big spoon Mustard oil in it & keep the gas on high flame to burn the oil high flame..
- When smoke starts coming out of Kadhai, turn off the flame & let the oil cool down a bit..
- After some time, again turn on the gas & keep it on medium flame..
- Then add finely chopped onion in it & roast it for 1-2 minutes but don’t roast them till golden brown because they will get roasted with bhindi also..
- After 1-2 minutes, add chopped bhindi pieces in it & roast them with onions for 2-3 minutes..
- After 2-3 minutes, add 1 teaspoon Salt, 1/2 teaspoon Haldi Powder & mix them properly..
- Now cook bhindi for 10-12 minutes till it becomes soft..
- After 10-12 when bhindi becomes soft, take them out in bowl..
- Add 2-3 Tablespoons Mustard Oil more in kadhai, add 1/2 Teaspoon Ajwain, 1 Teaspoon Jeera & let them sizzle..
- When they start sizzling, add finely grinded tomato purée in t with 1 Teaspoon Salt so that they start releasing oil quickly..
- After 5-6 when purée starts releasing oil, add spices mix in it & roast them for 2-3 minutes..
- After 2-3 minutes, turn the gas on low flame & add 4 Table Spoon Dahi in it & start stirring it immediately so that it doesn’t get burned..
- After 2 minutes, add cooked bhindi & onion in it & mix them properly..
- Then add 1 teaspoon garam Masala, 1 teaspoon kasuri Methi & Dhaniya leaves in it & mix them properly..
- Your Bhindi Sabzi Masala is ready to be served..
