  1. You need of Chicken.
  2. Use 400 g of chicken thigh meat, cubed.
  3. Provide 200 g of cornflour.
  4. Get 1 of egg.
  5. Prepare 2 tbsp of olive oil.
  6. Use 1 tsp of salt.
  7. Provide 1/2 tsp of fresh ground pepper.
  8. Prepare 500 ml of vegetable oil.
  9. You need of Orange Sauce.
  10. Use 1 tbsp of marmalade.
  11. Take 2 of oranges, zest and juice.
  12. You need 1/4 cup of white vinegar.
  13. Use 1 tbsp of cornflour.

Steps to make Orange Chicken:

  1. Roughly dice up the chicken thigh meat and put into a large bowl.
  2. Combine the olive oil, egg, salt and pepper in a bowl and whisk to form a smooth wash.
  3. Add the vegetable oil into a big pot on a high heat, and while that’s coming to a boil, prepare the chicken by dipping in the egg wash, then rolling in a bowl of cornflour before CAREFULLY placing the chicken in the hot oil. Should be able to do 5 or 6 at a time..
  4. For the orange sauce, grate the oranges then juice them. Get your marmalade dishes out ready.
  5. Add the juice, rind and marmalade to a pan, and bring to a low boil on a medium high heat. Add the cornflour and vinegar. It should reduce down to thick orangey goo. Marvellous!.
  6. Now, throw your deep fried chicken pieces into the orange sauce and gently mix until each piece is well covered. Serve with rice and enjoy!.
