  1. Add 4 and 1/2 cups of water and oxtails to a large pot..
  2. Add salt, pepper, 1/3 cup of oxtail seasoning, curry powder, dry thyme and bay leaves to the same pot..
  3. Stir, Cover pot and cook on medium heat for 2 hours.
  4. Dice potatoes into medium squares. (Preferably while oxtails are cooking).
  5. Take 1of 4 cups of water and Mix it with remaining 1/3 cup of oxtail seasoning than stir. ( preferably while oxtails are cooking).
  6. Take 1 of 3 remaining cups of water and mix it with 1/3 cup of flour than stir. (Preferably while oxtails are cooking).
  7. After 2 hours remove pot from heat..
  8. Add potatoes, baby carrots flour mixture, oxtail seasoning mixture, remaining 2 cups of water, sugar, and hot sauce to large pot..
  9. Stir added ingredients in. Than cover pot..
  10. Cook for 1 Additional hour. Than remove from heat. Enjoy..
