- Firstly, cut the paneer into cubes. Heat 2 tablespoons oil in a non-stick pan. Add the paneer cubes..
- Shallow fry the paneer cubes till golden and crispy. Drain and soak it in hot water for about 15 minutes..
- Meanwhile, soak cashewnuts and almonds in water for 30 minutes..
- Remove the skin of the almonds. Transfer the soaked and blanched almonds and cashewnuts into a blender and blend it into a smooth puree. Set aside..
- Add more 2 tablespoons oil into the same pan in which the paneer was fried. Add cumin seeds and allow it to sizzle..
- Add the finely chopped onions and saute till the onions are golden brown in color..
- When the onions turn brown, add in the ginger garlic paste and saute it well till the raw smell leaves..
- Add in the spice powders ie. kashmiri red chilli powder, coriander powder, cumin powder and turmeric powder and saute it well..
- Now add in the puree made with the nuts. Add little water and mix well and saute for few minutes..
- Add sugar and salt..
- Add water and paneer and mix well..
- Cover and cook on low flame for about 15-20 minutes..
- Add in kasuri methi leaves (powdered) and awadhi kadhai veg masala or garam masala powder and mix well..
- Add in cream and mix well..
