  1. Place the pancetta in small pan and fry until golden, about 5 minutes Set aside.
  2. Preheat the oven to 180 oC Slice the potato into 1/2cm slices and place on a baking sheet Drizzle with olive oil and season with salt and pepper.
  3. Bake for 20 minutes Remove from the oven and top with the dairy free cheese and pancetta.
  4. Bake for another 10 minutes Serve topped with a little blob of mayo and a sprinkle of chives.
